Mexican Scallions: What Are They and How Do I Use Them?

Mexican scallions (aka green onions) look like scallions on steroids.  They are regular scallions but have spent more time growing.  The Mexican scallions I bought were 16 inches long—truly eye-catching.  Normal scallions are about 10 inches long.

I found my Mexican scallions, not surprisingly, in a Mexican supermarket called El Super.
  I couldn’t resist adding them to my cart.  At first I thought I’d just use them as I would a normal scallion—to add flavor and a bit of color to soups and stir-fries.  They do taste the same as their smaller version

But Mexican scallions are big enough to be treated as a vegetable.  They can be grilled or oven-roasted and served as a side.  

I’m always seeking out new vegetables, and now I’ve found one.
