The Joeyburger |
Joey is the only young family member who has stayed
vegetarian (except for pepperoni on his pizza) since he was a toddler. He may be the only one at our table willing
to eat any vegetable put in front of him.
Could I create a worthy sandwich for him? I started with a gigantic bun. It was easily 6 inches in diameter and about
2 inches high. It looked like it could
hold dinner for three people.
These are the vegetables I had, and this is what I did to
make them sandwich-ready.
Bell Peppers - thinly sliced and fried in olive oil for 5
minutes
Red Onion – 3 thin slices and served raw
Medium Tomato – thin slices and served raw
Romaine Lettuce – 1-2 large leaves torn into pieces
Zucchini - thinly sliced the long way and fried in olive
oil for 5 minutes
Cheddar Cheese – 4 thin slices
Mustard
Spread mustard on the empty bun and then pile on the veggies!
Vegetable additions Joey might have liked, if I’d had them:
Avocado slices
Cooked asparagus
Cooked asparagus
Cooked green beans
Raw grated carrots
