The Biggest Vegetarian Sandwich Ever

Just how big is your mouth, Joey?  He laughed and said, “Big enough.”  And that’s how the Joeyburger came into existence.

Joey is the only young family member who has stayed vegetarian (except for pepperoni on his pizza) since he was a toddler.  He may be the only one at our table willing to eat any vegetable put in front of him.

Could I create a worthy sandwich for him?  I started with a gigantic bun.  It was easily 6 inches in diameter and about 2 inches high.  It looked like it could hold dinner for three people.

These are the vegetables I had, and this is what I did to make them sandwich-ready.

Bell Peppers - thinly sliced and fried in olive oil for 5 minutes
Red Onion – 3 thin slices and served raw
Medium Tomato – thin slices and served raw
Romaine Lettuce – 1-2 large leaves torn into pieces
Zucchini - thinly sliced the long way and fried in olive oil for 5 minutes

Cheddar Cheese – 4 thin slices
Mustard 

Spread mustard on the empty bun and then pile on the veggies!

Vegetable additions Joey might have liked, if I’d had them:

Avocado slices
Cooked asparagus
Cooked green beans
Raw grated carrots
Raw cucumber slices
