Liquid smoke sounds like something film crews use to
create special effects. In a way that’s
exactly right, although it’s cooks rather than film crews who work the magic.
Imagine you are cooking something and wish it had a touch
of the great outdoors (or a charcoal grill) in its flavor. Just grab your
bottle of liquid smoke, which is made out of condensed smoke and water, and
spread some of it on meat, fish or poultry. Or add a small amount to sauces or
marinades. I use liquid smoke when I make
Salmon Spread.
