Cookbooks often tell you that one 3½ pound chicken will feed four people. Somehow when I roast a chicken this size, we end up with a week of leftovers.
Are people eating less? Am I making more side dishes in case one of my
guests turns out to be vegetarian? Could
I be slicing the chicken into too small pieces, with guests serving themselves smaller
amounts because they think I’m skimping?
My solution at the moment is to make a side dish of
spaghetti to accompany the chicken and use a lot of Pesto Sauce on both. Pesto Sauce is one of my
favorite tastes, and it really disguises the chicken.
