Sue's Coleslaw - serves 6
Dressing
1/2 cup mayonnaise
1/4 cup plain yogurt1 1/2 tablespoons lemon juice1 1/2 tablespoons apple cider vinegar1 tablespoon sugar1/2 teaspoon salt1/4 teaspoon black pepper
Coleslaw
1 small (or 1/2 large) cabbage, thinly sliced1 red bell pepper, thinly sliced1 small red onion, thinly sliced2 tablespoons fresh dill, chopped
Combine the mayonnaise, yogurt, lemon juice, apple cider vinegar, sugar, salt and black pepper in a medium bowl and stir until well combined. Add the cabbage, bell pepper and onion and stir until the vegetables are covered with dressing. Sprinkle with fresh dill. Serve in the bowl or transfer to a serving dish.
