“Do I have to go to the grocery today?” my inner voice
whined. “What could I make for dinner if
I don’t go?”
I opened the freezer door and spotted the bag of tilapia
filets.
An inexpensive white fish sold without bones, Tilapia, is bland, allowing you to season as you wish. Sometimes I’ll sprinkle the filets with curry powder, turmeric, cumin and coriander before roasting. Other times I’ll just use garlic powder. Cooked in the oven for 10-15 minutes, tilapia is one of the easiest fish dishes you can make.

Crunchy Baked Tilapia - serves

1/4 cup dried
bread crumbs or panko crumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup mayonnaise
4 4-6-ounce tilapia filets (partly frozen is okay)
1/4 cup grated Parmesan cheese

Preheat the oven to 425 degrees. Line a baking
sheet with aluminum foil and set aside.
Combine the bread (or Panko) crumbs, Parmesan cheese,
salt and pepper on a large plate. Place the mayonnaise on another large
plate. Set aside.
Rinse the fish. Don’t worry if it is partly
frozen. You will just need to lengthen
the cooking time.
Using a fork, dip a filet into the mayonnaise and coat
both sides. Then transfer it to the bread crumb mixture and coat both sides.
Transfer the coated fish to the baking sheet and repeat
the process.
If the fish is not partly frozen, bake for 10 minutes, or
until it separates into flakes when you press on it with a fork. If
partly frozen, double the cooking time to 20 minutes. Serve immediately.
