Too Many Cherry Tomatoes


I love summer and the abundance of cherry tomatoes that flood farmer's markets and grocery stores. However, there is a limit to how many cherry tomatoes the family is willing to eat. What to do with the excess?



Here's my brother Steve's quick and easy recipe.

Cherry Tomato and Cheese Tortilla - serves 1 
1 8-inch flour tortilla
12 cherry tomatoes, cut in half
1/2 small baked potato (my addition), cut into 1/2-inch cubes
2-3 thin slices mozzarella cheese
Several dashes hot sauce 
Begin heating a large non-stick frying pan over medium-high heat. When it is hot, gently lay the flour tortilla in the pan and heat until it just starts to brown. Flip it over with a spatula and quickly cover it with the tomatoes, potatoes and cheese. Cover and turn the heat down to medium-low. After 20 seconds, check to see if the cheese has melted. If yes, transfer the tortilla to a plate, add some hot sauce, fold and eat. If not, cook another 10 seconds or until the cheese has melted, and proceed as above.
