Mom Money-Saving Tip 102


What should you do with leftover fresh parsley?  It doesn’t cost much, so there’s a great temptation to 1) let it rot in the fridge, or 2) toss it out.  Here’s a third option.  Microwave it until it dries out. It takes less than 2 minutes to go from fresh to crunchy. Then crumble it with your fingers and store it in a closed container.

The stems take more effort to crumble, so cut away and discard the bottom 4 inches before putting the rest in the microwave.


Here’s what to do:

Rinse parsley and thoroughly pat dry. Any water left on the parsley will slow the process.
Place parsley on a paper towel sitting on a plate and put it in the microwave.
Microwave on high for 1 minute.
Check to see if it’s crunchy.  If yes, remove from the microwave and crumble.
If no, microwave on high for 30 seconds and check for crunchiness.
Repeat until the parsley is crunchy and then crumble.
Store in an airtight container. Use within a few weeks.
