Try Bacon and Tomato Soup as a Light Dinner

I like trying new recipes, but there are times when I crave a dish from my past.  The trigger to making Bacon and Tomato Soup was seeing large, luscious-looking tomatoes at the grocery store.  They reminded me of my childhood, when a tomato tasted like a tomato.  I bought some and sliced them up as a side dish.  They were so good that Bart and I ate them all in one sitting.

Using Ingredients You Already Have

With the current virus scare, you may be reluctant to head out to the grocery store to pick up a few things.  That’s how we came to have bowls of Boston Clam Chowder for dinner last night.

Feeling Nostalgic

I like trying new recipes, but there are times when I crave a dish from my past.  The trigger to making Bacon and Tomato Soup was seeing large, luscious-looking tomatoes at the grocery store.  They reminded me of my childhood, when a tomato tasted like a tomato.  I bought some and sliced them up as a side dish.  They were so good that Bart and I ate them all in one sitting.

Baby Bellas: What Are They and How Do I Cook Them?

I was in such a hurry to complete my grocery shopping the other day that I grabbed the first package of mushrooms I saw, not paying attention to what the label said. Only when I was putting them in the vegetable bin did I notice I’d purchased “Baby Bella Sliced Mushrooms.”

Mom Cooking Tip 138

Bacon slices are easier to separate when you’re frying them and the fat begins to melt.  Use a fork or tongs to nudge the slices apart.

Mom Cooking Tip 114

To crisp bacon, pour off the fat into a disposable container—not down the drain—while it’s cooking.

Mom Cooking Tip 110

To help bacon slices separate from each other, roll the package of bacon into a cylinder and squeeze it a few times before opening it.

Pancetta: What Is It and How Do I Cook It?

Pancetta falls somewhere between ham and bacon.  Also known as Italian bacon, it’s made from pork belly that has been salt-cured.  It’s available in thin slices, like prosciutto, and also in tiny cubes.  I use it to flavor soups and pasta in the same way I would use bacon, although bacon is saltier and smokier—more in your face in terms of taste.  It is pronounced pan-CHET-ah.

Mom Cooking Tip 13

Too fond of bacon? Next time you buy a package, separate the uncooked strips and freeze them individually or in packages of 2 (in resealable freezer bags, freezer wrap or foil). Defrost only what you need. You can use a large resealable bag to store many individual slices, as long as they don’t touch each other. Lay the bag flat in the freezer. Once the strips are frozen, you can stack them on top of each other.

Soup As a Meal

Bean, Vegetable and Sausage Soup (photo by Andy Mills)
I used to associate soup with being sick.  I’d be lying in bed, and my grandmother would bring me a bowl of homemade chicken soup.  I’d slurp it up and feel better.

Actually, I think this is a false memory.  My grandmother lived too far away to bring me soup, although whenever we visited her chicken soup was invariably on the menu.
