A Favorite Lunch from the Past

Chicken Melt
When my children were young, they usually ate whatever I put in front of them.  Sometimes they would resist.  For instance, they refused to eat buckwheat, which they said tasted like wet carpet.  I thought they were making it up until I ate some myself.  They were right.


One of our better memories is the Tuna Melt, which sometimes transformed into the Chicken Melt.  This homegrown concoction features 2 halves of an English muffin, toasted and topped with tuna or chicken salad and slices of cheese.   
Tuna Melt (or Chicken Melt) – serves 1 
1 English muffin
1/2 cup Tuna Salad or Chicken Salad
2 slices Cheddar, Swiss or Monterey Jack Cheese
Preheat the broiler, with the top oven rack just under the broiling unit. 
Cut an English muffin in half and toast each half in a toaster.  Spread tuna salad on each half, and place 1 slice cheese on top of the tuna. 
Place the muffin halves on a baking sheet, metal pie pan or broiling pan with a rack and put under the broiler.  Broil the halves for about 30 seconds, or until the cheese melts.  Watch them carefully. It seems like one second after the cheese melts, it blackens. Serve and eat!
