Why Not Try an Antipasto Lunch Plate?


Whenever my brother decides it’s time to lose weight, he does two things.  He eats less, and he makes himself an Antipasto Lunch Plate.  When he first told me about his routine, I asked for the Lunch Plate recipe.  I wasn’t looking to lose weight, but I liked the idea of having something new to eat in the middle of the day.

Here is what’s on the plate in the above picture: lettuce, a sliced hard-boiled egg, slices of salami, several large olives, anchovies, cut-up cheese, a cucumber, cherry tomatoes, broccoli and Italian dressing.

For those not dieting, some French bread would be a handy addition.

If Speed to the Table Is the Issue...


When I need to get dinner on the table in 20 minutes, the biggest question is what part of the meal is going to suffer.  Most pastas and white rice are ready in 20 minutes.  Grilled, pan-fried or stir-fried meat and fish can go from raw to cooked in 10 minutes, although you can forget about roasts—unless you are just reheating them.

The big challenge is the fresh vegetable.  The absolute easiest is broccoli.  Prep time is quick.

Why do green vegetables like asparagus, broccoli, brussels sprouts and green beans become dull and unappetizing when I cook them? –Ralph B.

Most likely you overcooked them.  To maintain their bright color, cut the vegetables into smaller pieces and cook them for no longer than 5 minutes.

Want to make sure your green vegetables stay bright green after cooking?  Add them to boiling water and don’t over-cook them.  Five minutes should be enough time to cook any green vegetable.

Mom Cooking Tip 80


When preparing fresh broccoli, don’t discard the long stalks.  Peel them, slice them into 1/4-inch coins and cook them along with the florets.
