When I Learned to Love Spaghetti and Meatballs

Growing up in a coal-mining town in Pennsylvania meant different foods served at dinner, depending on where your parents came from.  My little town, about 15 miles Northeast of Pittsburgh, included many nationalities, drawn to the coal mining and steel working opportunities.

Thus was I introduced to Syrian sandwiches, made on bread much thicker and fresher than today’s packaged and often tasteless pita bread.  Or I might have been served that Polish classic, sauerkraut and kielbasa (sausage), or sticks of Greek souvlakia (aka shish kebab).  Or if I were eating at my grandmother’s house, I could count on boiled chicken.

I loved them all, but my favorite food from that time was Spaghetti and Meatballs.

On-the-Run Dinners

There are some nights when real life intrudes on dinner.  The no-food event we were attending started at 7 pm, and it was an hour’s drive away.  Normally we eat around 7 pm. Waiting till we got home at 10 pm for dinner was out of the question.  We would have to eat in the car.

The Birthday Dinner

Lasagna with Meatballs (photo by Andy Mills)
We have a tradition in our family that whenever someone has a birthday, he or she gets to pick the Sunday dinner menu, and I will be the personal chef.  With kids I can usually count on Homemade Pizza as the object of desire.  Other choices over the years have included Eggplant Parmesan (from an adult vegetarian), Greek Salad (from a junior vegetarian), Noodle/Meatball Soup and Spicy Pork Noodles.  When it’s my birthday, I always pick Blinis because everyone likes them, and Kevin (my cookbook co-author) will make them.

Last week Andy, who was celebrating his 14th birthday and who I thought was a committed vegetarian, surprised me with his choice: Lasagna with Meatballs.

Rescuing Food Disasters

Meatball Sandwiches
Unfortunately you can’t just call the Fire Department when you have a food disaster.  Instead you need to call on your ingenuity.  Hunger is a great motivator.  Just ask my brother, who filed this report.

“I was preparing my dinner, having gotten out the three left-over meatballs (from the previous night's ‘spaghetti and meatballs’ dinner), the spaghetti sauce, the mozzarella cheese and the last bun that was in the house.  I had just finished toasting the bun and was in the process of moving it from the toaster-oven to a pan.  There I intended to add the meatballs, sauce and cheese before reinserting the whole concoction into the toaster-oven for a few minutes, at the "top brown" setting, so as to melt the cheese and warm everything up.

Kale: What Is It and How Do I Cook It?

You’ve probably seen kale at the salad bar—not necessarily in the salads but underneath the salads.  It’s practically indestructible and also cheap, with thick stems and strong, curly leaves.

Kale is often a deep green, but it can also have some purple or blue streaks.  It’s sold in bunches in the fresh vegetable sections of most stores, and it holds up well in the fridge.  Avoid bunches that look dried out or have yellowish leaves.

Do You Prefer Convenience or Taste?

When I was growing up, my mother went through a phase of buying Swanson Frozen TV Dinners for the family.  She loved the idea of sliced turkey, mashed potatoes and green peas organized in their own compartments on a lightweight aluminum tray.  Taste was a distant third to convenience and novelty.

I didn’t go that route.  Once I realized that food could be more than just something to put in my mouth, I wanted good tastes.  The Meatball Sandwich I discovered at a take-out counter on New York’s West 43rd Street, just down the block from my first real job, tasted better than any homemade food I had in my youth.

Noodles and Sauce: Finding the Right Combo

In my youth, noodles cooked at home always meant spaghetti.  In Italian restaurants, I could order lasagna, ravioli or macaroni and cheese.  But I’d never heard of the intriguingly-named penne, farfalle (butterflies or bowties), linguine, bucatini, rotini, rotelle, rigatoni and maybe 100 more served in Italy.   This list doesn’t include Asian noodles.

My mother’s go-to cooking guide was “The Settlement Cook Book,” which had the curious subtitle “The Way to a Man’s Heart.”  It was initially published in 1901.  Her copy, the 22nd edition, was dated 1938.  Noodle recipes took up just a few pages, and you had to make your own noodles!  I don't remember her trying any of those recipes.

Instead she reached for the canned spaghetti.

The ICK Factor

Roast Chicken
Many recipes have what I call “The ICK Factor.”  For some, it’s cutting onions, which can make you cry.  For others, it’s washing the dirt off fresh spinach, leeks or beets.

Cracking eggs and getting raw egg white on your fingers is icky.  So is cutting away fat from a raw pork chop.

India Meets Italy at My Table

Pasta with Indian Cauliflower Sauce
I like food from other countries.  Maybe it’s because I grew up in a Western Pennsylvania coal and steel town populated by many nationalities.  Every summer weekend my family attended a community picnic featuring dishes from a specific nationality.  The Italian Picnic introduced me to Spaghetti and Meatballs and Veal Parmesan.  The Polish Picnic offered Grilled Kielbasas (sausages) and Sauerkraut.  I loved the Flatbread on offer at the Syrian Picnic and the Stuffed Grape Leaves, Baklava and Tiropita (cheese turnovers) at the Greek Picnic.

Emergency: Bring on the Ground Turkey

I try to make a list before I go get groceries, although sometimes I leave the list on the counter.  Other times I’m in the store looking at the list and somehow failing to see one of the items I’ve written down.  I have yet to understand why that happens.  I’ve just been to the eye doctor, and I am not going blind.

Maybe to compensate, I always buy a package of ground turkey when it’s on sale—even if it’s not on my list.  I probably just forgot to write it down.

Mom Money-Saving Tip 4

Don't always stick to your shopping list. Today I spotted 20-ounce packages of ground turkey breast on sale for $2.99, a $3 savings. So instead of buying the chicken breasts I had planned to get for tomorrow’s dinner, I bought a package. I figured I’d make meatballs, add a jar of spaghetti sauce, sprinkle with grated mozzarella cheese and serve meatball sandwiches. I already had the sauce and the cheese at home, so all I needed was a loaf of French bread. When you go shopping, it helps to have a few simple recipes in your head or on your smartphone.

Just About Any Topping Goes with Spaghetti—Even Mussels

I love spaghetti so much that I could eat it every night of the week.  When I was younger, Spaghetti with Garlic Sauce was my dish of choice.  Hot pasta mixed with fresh chopped garlic, Parmesan cheese and fresh parsley kept me and my food budget happy.

Bart introduced me to Spaghetti with Clam Sauce (aka Spaghetti Vongole).  I immediately liked it, possibly because it bears a great resemblance to Spaghetti with Garlic Sauce, minus clams and tomatoes.

What I'm Serving at My Oscar Party

Chocolate Cheesecake
I grew up watching the Oscars, even though I never saw any of the nominated movies in my Pennsylvania coal-mining town.  The show seemed so glamorous.  Then I moved to California and went to hundreds of movies every year as part of my job as an entertainment journalist.

So far, no one has assigned me to cover the Oscars, and I’m glad.  I hear it’s agony for the reporters, who have to dress up and write their stories super-fast while missing most of the action.  Seldom do they eat until late evening.  Meanwhile, I sit around in front of the TV in sweats and slippers and see it all.

My Worst Food Prep Job

Cooks deal with a lot of yucky jobs in the kitchen, but right now I can’t think of anything worse than removing the skin of a raw chicken.  Maybe I’ll feel differently when I sit down to eat Indian-Style Whole Roast Chicken tonight, but not now.

How to Save a Lot of Money by Not Eating Out

Maybe I’m a control freak, but I like to cook and know what I’m eating.  Some nights, though, I throw up my hands in horror when I realize I’m cooking for 10 people.  That’s what happened this past weekend.  After two days spent in the kitchen, I heard myself suggesting, “Let’s eat out.”

I had already served Homemade Vegetarian Lasagna with Meatballs on the side, Garlic Bread, Salad, Honeydew Melon Slices and Chocolate Mousse Cake on Friday night.

Draft an ice cream scoop to shape meatballs or burgers, keeping your hands out of raw ground meat.
